I think prove-ing let's them get that airy feeling to them, well that's why we do it when we make Polish doughnuts anyway. Something about letting the yeast rest. Bagles here can get a bit exxy too, and I figured well how hard could they possibly be to make? :) I'll be attempting them soonishly :D
