At last! I have been wanting to make home-made ones for aaaages, since I can't get to NY and buy some at some funky street vendor with lox cheese and a cherry coke ;)

I made bagels once. :D I don't remember letting them "prove" at all though! And they were still good. :) Funny, I eat bagels every day for breakfast, but I ran out a few weeks ago... they are expensive to buy if they are not on sale, so I boycotted buying them until Safeway put them on sale again lol... but they are being stubborn about it!! I've had to find alternate breakfast foods in the meantime (no other place sells the brand I like haha), and yet it never occurred to me to make my own... :p

Cute kitties! And I approve of Zen Cat, since I said I approved of cats in every post, regardless of how they are presented. :p

I think prove-ing let's them get that airy feeling to them, well that's why we do it when we make Polish doughnuts anyway. Something about letting the yeast rest. Bagles here can get a bit exxy too, and I figured well how hard could they possibly be to make? :) I'll be attempting them soonishly :D
