Because I start work at 6am (or 5.45am if you want the honest truth), I often just do not have the time to pack a healthy lunch/breakfast. And by about 10am or so I am STARVING even if I have oats or whatever. So, I need something to nibble on. Something healthy, cheap, storable. Museli bars, right? Well yeah. But you pay like $7-8 for a box of 6 of the really nice ones. And they are often packed full of dried apricots (YUK!!!!!!) or other stuff I don't like so I have to hunt around to find ones I enjoy. Plus they often have LOADS of sugar added to them which yeah isn't so good for the old chompers and waist line. So I thought well damn why not just make my own?
 4/5 cups of rolled oats
1/4 cup honey
2 cups peanuts
1 cup sunflower seeds (husked!)
3/4 cup sesame seeds
whatever other nuts/seeds you want, crushed up a bit is probably the best option
3/4 cup of apple sauce
1/4 cup of cocoa (optional!)
A couple handfulls of crystalised ginger and/or dried fruit of your choice
2.5 teaspoons of cinnamon (optional but gives it a lovely ZING)
1/3 cup of brown syrup/rice syrup
2 table spoons oil or butter but oil better
3/4 cup of brown sugar
1 tea spoon of salt
Mix absolutly everything together very well, pop into a baking tray, packed in tighly, bake for 45mins at 150 Celcius. If you want to be really game you can use a crushed cookie/biscuit base, or even melt some chocolate and stir it into the mix.
Allow to cool and set
Cut into pieces suited for your own taste/preferences
Keep in air-tight container until required. I don't recommend wrapping them in anything as they can be quite sticky, esp when very fresh, which is why I HIGHLY recommend you keep them in the fridge until required.
Utterly delicious any time of the day, they keep for about 2-3 weeks. But I often buy the nuts/seeds in bulk and have them ready to go. Once you have brought everything it lasts you a long, long time and works out to be about 2 cents a bar, if that!
