Pumpkin Pie


Serving size: Serves 8

INGREDIENTS

250g packet of gingersnap biscuits
100g unsalted butter, melted
1½ cups pumpkin puree
1 cup brown sugar
1 teaspoon cinnamon
pinch of nutmeg ------- YUKKY!!!! NO!!!!!! Can do without
1 tablespoon cornflour
3 eggs, lightly beaten
300ml cream
whipped cream, to serve
maple syrup, to serve

 

 

METHOD

Preheat oven to 200°C.

Place gingersnap biscuits in the bowl of a food processor. Process until smooth. Add butter and process until combined. Press into a 26cm collapsible base tart tin. Bake for 10-15 minutes or until lightly cooked. Reduce heat to 160°C.

Combine remaining ingredients in a large bowl. Beat until well combined. Pour into prepared crust. Bake for 30 minutes or until set.

Serve sliced with whipped cream and drizzled with maple syrup.

Pumpkin puree:
½ a pumpkin (approx 750g) will yield about 550g when peeled and de-seeded. Place cubed pumpkin in a bowl. Cover loosely with plastic wrap, and microwave for 10 minutes.

hehehehehe! I'll be making my own puree. Mum decided to grow pumpkins in her veggie patch this year and rather than listening to me when I told her they tend to be ENOURMOUS plants that take up loads of room, she went and planted a ruddy PATCH full. So now she has all these pumpkins she has no idea what to do with. Guess who's getting the left-overs! :-D I've never actually made pumpkin pie before so I thought oh what the hey, I'll give it a go.

Nooooooo!!!!! I liiike your little poneh!!!! It's the spice I can't stand, it makes my tummey feel funny. Funny tho isn't it, Nutmeg is a reallly popular name for ponies, I've known two in my life, plus yours now.

I realised that 2/3 of my horsies have food names. I named none of them and yet I have a spice and a syrup. It kind of works for them. Nutmeg is spicy and my Dad always calls Moocow Treacle. Mo also can't stand Molasses, ironic.

:-D I did notice that with your two but didn't really think much of it, esp when my two have got such drool and creative names like Danny and Destiny *rolls eyes* My only defense is that I didn't name either of them. Always thought if I ever bred a foal from Desi (which I won't) I would name it Legacy, always loved that name....
